Slice the garlic by hand rather than crushing or mincing it. Crushed garlic releases more of the compounds that turn acrid when cooked this long, and thin slices give you texture in the finished dish instead of disappearing into a paste.
This is a pantry dish by design — resist the urge to add extra ingredients. The whole point is how much flavour five things can produce.

Thin layers, restrained sauce and a béchamel made properly. The failure mode is always the same — too much filling, not enough patience, and a slice that slides apart on the plate.
Milk before tomato, white wine rather than red, and three hours at a bare blip. A real ragù is a meat dish loosened with tomato, not a tomato sauce with mince in it.
