In Bologna this is served with tagliatelle, because flat ribbons hold a meat sauce and round spaghetti does not. Use spaghetti if that is what you have and what you grew up with, but the tagliatelle version is noticeably better.
The three hours are not negotiable. At one hour you have a decent mince sauce; the transformation happens in the third.
It improves for a night in the fridge and freezes for three months.

Thin layers, restrained sauce and a béchamel made properly. The failure mode is always the same — too much filling, not enough patience, and a slice that slides apart on the plate.
