No ricotta, no mozzarella. The northern Italian version this comes from uses béchamel, and the two together make something heavy and wet.
Dried sheets that say no pre-boiling still need enough moisture around them. If your ragù is very thick, loosen it with a ladle of stock before layering.
Assembled and unbaked, it keeps two days in the fridge. Add 15 minutes to the bake from cold.
