Cook’s notes
The broth is the only slow part and it can be made up to 3 days ahead, or frozen for 3 months. The tare keeps for weeks in the fridge.
Never cook the noodles in the broth. The starch they release clouds it and makes it gluey — this is the most common mistake in home ramen.
For the eggs: boil for exactly 6 minutes 30 seconds from cold-fridge, plunge into iced water, peel, then steep overnight in equal parts soy sauce, mirin and water.

The weeknight ramen. The miso paste is fried in aromatics before the stock goes in, which takes a 40-minute bowl a surprising distance towards an all-day one.
The mussels make their own stock in four minutes flat. Strain that liquor carefully, build the soup on it, and you get depth that no fish stock in a carton comes close to.
