Cook’s notes
White (shiro) miso gives a sweeter, milder bowl; red (aka) miso is saltier and much more assertive. A 50/50 mix is a good default.
For a vegetarian version, swap the pork for finely chopped shiitake browned the same way, and use a kombu and mushroom stock. Leave out the egg to make it vegan.
Shop-bought stock is genuinely fine here — the tare is doing the heavy lifting.

Built in three separate parts — tare, broth and toppings — the way real ramen shops do it. Assemble in the bowl, not the pot, and never boil the noodles in the soup.
The mussels make their own stock in four minutes flat. Strain that liquor carefully, build the soup on it, and you get depth that no fish stock in a carton comes close to.
