Cook’s notes
Buy mussels the day you cook them and keep them in the fridge under a damp cloth, never sealed in a plastic bag or submerged in water — they're alive and will suffocate.
After cooking, discard any that stayed firmly shut.
The soup base freezes well without the cream or mussels. Add both when you reheat.
