Short-grain Japanese rice is the reliable choice because its starch makes the onigiri hold together. Medium-grain rice can work, but long-grain rice will usually crumble; add a little less water if your rice packet gives a different cooking ratio.
You can replace the salmon with leftover grilled fish, cooked mackerel or a spoonful of salmon flakes. Keep the filling fairly dry: wet or oily filling makes the rice split while you shape it.
Onigiri are best at room temperature on the day they are made. Wrap them individually and refrigerate leftovers promptly, but bring them back to room temperature before eating; cold rice turns firm and loses its pleasant chew. Do not leave cooked rice at room temperature for more than a couple of hours.
