Started in cold water, dried in the pan, and finished with warm milk. Gluey mash is not a potato problem — it is a temperature and a technique problem.

Cook’s notes
A ricer is the single piece of equipment that changes this dish. It is cheap, does nothing else, and is worth it.
The butter quantity is not a mistake. Mash is a vehicle for butter, and cutting it back gives you boiled potato with a milk problem.
To make ahead, spread it in a dish, dot with more butter, and reheat covered at 160°C for 25 minutes.

Cold beer, a lumpy batter and oil that never drops below 180°C. The bubbles in the beer are doing structural work, so mix it at the last possible moment.
