Cook’s notes
Everything at room temperature. Cold cream cheese needs beating to combine, and beating is exactly what you are trying to avoid.
It genuinely needs the overnight chill. At six hours it is a pleasant set custard; at twelve it is cheesecake.
A cracked top is still delicious and completely hidden by soured cream or fruit spooned over. Nobody has ever complained about the structural integrity of a pudding.
