Watch the butter rather than the clock. It goes from nutty to burnt in about thirty seconds, and a dark pan hides the colour change until it is too late.
The dough keeps three days in the fridge and three months frozen as scooped balls. Bake from frozen with two extra minutes — arguably better than fresh, and you get warm cookies on demand.
If they spread into one sheet, the dough was too warm. Chill the scooped balls for 15 minutes before the next tray goes in.
