**Sourcing and health, honestly:** shark is high on the food chain and accumulates more methylmercury than almost any other fish. The US FDA and EPA place it in their "avoid" category, and UK guidance says the same — pregnant or breastfeeding women and young children should not eat it at all, and everyone else should treat it as an occasional dish rather than a regular one. Many shark species are also overfished or threatened. If you make this, ask your fishmonger exactly which species it is and where it was landed, and avoid it entirely if they can't tell you. Swordfish and mako take this recipe unchanged. Honestly, so does a thick halibut or monkfish steak, and both are easier to source responsibly — the marinade and method are the point here.
