Bone-in, skin-on. The bone slows the heat reaching the thickest part, which buys you the margin that makes breast forgiving instead of unforgiving.
A thermometer costs less than two of these breasts and removes the only difficult thing about the recipe.
The pan must not be non-stick. Fond does not form properly on non-stick, and without fond this is chicken with thin gravy.
